Recipe: Dubu Jorim


This is a simple Korean tofu dish that is easy to make. It is sweet, and savoury and goes with anything. It is probably my favourite tofu recipe.

Ingredients

Block of Tofu
3 cloves of garlic
2 spring onions
1tbsp Gochugaru flakes
1tbsp sesame oil
1/4 cup water
2tbsp brown sugar/maple syrup

Directions

1) Drain tofu and pat dry with kitchen towel, then cut into slices while you heat any neutral oil.

2) Fry tofu in neutral oil until golden brown.

3) Finely chop garlic & spring onion, leave aside.

4) Add garlic, spring onion, sesame oil, soy sauce, water, Gochugaru, sesame oil & maple syrup/brown sugar into a bowl and stir well.

5) Add sauce to the tofu and marinate for 5-10 mins.

Add the green tops of spring onions to garnish.


Notes: Gochugaru flakes really make this dish and shouldn’t be substituted for regular chilli flakes, which will bring too much heat that will overpower the flavours (trust me, I tried!) It is not difficult to find online, but check your local Asian market where it is likely to be cheaper. It is a staple ingredient in Korean cooking, so it won’t be one of those ingredients you only use for one recipe.
