This Vietnamese tofu dish is quick and easy to make, using cheap ingredients. It tastes fresh, sweet and herby.
Ingredients
1 Block of tofu
1tbsp corn starch
1tbsp chili oil (or add 1/2tsp chili flakes)
3 spring onions (white part only)
Thumb-sized fresh ginger
2 cloves garlic
1tbsp tomato paste
1 can chopped tomatoes
1tbsp soy sauce
2tbsp brown sugar/maple syrup
Juice of 1/2 a lime
Sliced vine tomatoes (optional)
Fresh coriander (optional)
Directions
1) Drain and pat dry the tofu using kitchen towel.
2) Airfry for around 10 mins or fry in neutral oil until golden brown.
3) In a large pan, add spring onion, ginger, and garlic, and sauté in chili oil.
4) Add tomato paste, canned tomatoes, soy sauce, maple syrup/brown sugar and lime juice.
5) Add tofu and sauté for a further 5-10 mins
If you want some tomato chunks (which I think really adds to this recipe), add some sliced vine tomatoes in with the tofu for the last 5 mins of cooking. You could also use sun-dried tomatoes for a stronger flavour.
Garnish with green parts of spring onions and coriander. Serve with bread, rice, or veg of your choice.
