This simple Indian curry is warming, really filling and very cheap. Ideal for batch cooking.
Ingredients
2 cans chickpeas
1 can chopped tomatoes
1tsp coriander
1/2tsp tuermeric
1sp ginger
1tbsp tomato paste
1 onion
3 cloves garlic
Juice of 1 lemon (can use lime)
Directions
1) Chop onion and sauté in oil until browned.
2) Add spices, garlic, ginger and mix.
3) Add chopped tomatoes and simmer for 5 mins.
4) Add to blender/processor and blend into a gravy.
5) Pour back into pan, add chickpeas and salt to taste.
6) Wash out blender/processor with 1/2 cup of water into the pan.
7) Add juice of lemon and simmer for 5 mins.
Serve on rice and garnish with coriander.
